Angel Hair Pasta with Pesto and grilled butternut squash.
Not like we don't all know how to make simple pasta but this is one I like to make frequently for a quick and filling meal, especially during work days.
Butternut squash is a frequent staple in my kitchen and I usually have leftovers raw and diced in the fridge already. You'll want to chop them into medium sized pieces, toss with Olive Oil, Salt and Pepper and roast at 425 degrees for about 20 minutes or until al dente.
Boil water for pasta and cook Angel Hair Pasta. Warm some jarred Pesto Sauce in a pan, and then toss with the cooked pasta. Top with the butternut squash, some crushed roasted almonds, and some chopped green onion. Finish with a sprinkle of grated parmesan cheese.
For a little heat you can also add some sliced raw jalapeno peppers.
