Banana Bread
It's a cold and snowy/rainy Spring day so the need for fresh baked banana bread was heavy on my mind. Not to mention there were a few overripe bananas on the counter needing to be used. Normally in this situation it's slice them up and freeze them for future smoothies or make banana bread. Today the bread won. Not that it was a contest.

Ingredients
2-3 Ripe bananas mached
1 tsp baking soda
pinch of salt
1 Cup Sugar
1 egg beaten
1/2 tsp cinnamon
1 1/2 Cups AP Flour
1 Shot Butterscotch schnaps
1/3 Cup melted butter
Preheat the Oven to 325.
1. Mash the bananas in a bowl until smooth. Add the melted butter, and eggs.
2. In a separate bowl combine the flour, salt, soda, and cinnamon. Stir into the banana mixture. Add the butterscotch and stir until well mixed.
3. Pour into a greased loaf pan and bake for 1 hour or until an inserted knife comes out clean.
