Grilled Hot Avocados

Most people use Avocados cold in salads and spreads but the buttery creaminess of avocados make them wonderful hot as well, especially in this simple appetizer.

This is a great appetizer to serve at a dinner party because each person gets their own 1/2 avocado.  And remember, it's GOOD fat.

Prepare:

Fresh ripe avocados. One per 2 people.

Salsa

Lime

Parmesan Cheese

Salt and Pepper

Olive Oil

1.  Cut avocados in half and thinly coat flesh side with olive oil.  Place on a hot grill at an angle (so that the grill marks are at a diagonal to the flesh.  Grill for 2 minutes and then turn on the grill so that the grill marks make a diamond pattern.  If doing this on a stove just fry until the flesh is darkened and crispy.  The oils in the avocado will form a nice blackened crust over the flesh as it cooks.

2.  Flip the avocados skin side down once the fleshy side is seared and blackened.  Fill the middle with Salsa and then top with cheese.

3.  Close the grill lid or place into a 425 degree heated oven.  Bake in the grill or oven for about 5-8 minutes.  

4.  Serve with a little more cheese on a top and a nice squeeze of lime.  Serve each with a spool after they have cooled to the point where they can be held around the rim with fingers.

 

Guests will want to scoop out the avocado flesh using it's own skin as a bowl.  It's heaven and you will get a lot of compliments for having cooked the avocado which a lot of people have never had.
