Mac and Cheese Style Baked Cauliflower
The sauce in this recipe is out of this World! It uses a mixture of an old friend, Nutritional Yeast along with regular cheese. The result is a super creamy and rich sauce that can also be used on a number of other dishes.
This dish can easily be served as a main course but could easily adapt into a starter as well, even a side dish.
You Will Need:
1 large head cauliflower, cut into medium sized pieces. (About 8 cups)
2 TBSP butter
3 TBSP AP Flour
2 Cups Low Fat Milk
1 clove garlic, minced
2 Cups grated Cheddar Cheese
1/2 Cup Nutritional Yeast
Pinch Cayenne Pepper
2 egg yolks
1 1/2 Cups Fresh breadcrumbs
1. Preheat the oven to 350. Bring large pot of salted water to a boil and cook cauliflower about 8 minutes or until just getting tender. Drain and reserve 1 cup of liquid.
2. Melt the butter in same pan, add flour and stir constantly for 1 minute. Add the reserved liquid, milk, and garlic. Stir frequently about 10 minutes or until sauce has reduced some and is thicker. Remove from heat. Stir in the cheese, egg yolks, and cayenne. Fold in the cauliflower.
3. Pour into a greased casserole dish and sprinkle bread crumbs on top. Drizzle oil on top and bake uncovered for 30 minutes or until bread crumbs are golden brown.
Serve with a sprinkle of cheese.
