Raw Kale Pesto
Pesto doesn't always have to be made from Basil. Kale is actually a great ingredient for a basic pesto that also packs in some great nutrition as well. I prefer to make my Pesto Raw and not to cook or even blanch the pesto. In fact everything in this is raw and requires no cooking at all.
You'll Need:
6 cups chopped Kale
1/4 Cup EVOO
1/4 Cup Raw Sunflower seeds
Salt & Pepper
2 TBSP Minced Garlic
1/8 Cup Grated Parmesan Cheese
In a food processor pulse the garlic and Parmesan Cheese. Add the Kale, and keep on a steady blend in the food processor. Slowly pour in the Olive Oil until a creamy paste forms. Season with Salt and Pepper to taste. Will keep for several days in an airtight jar refrigerated. Great with any Pasta or mixed into Steamed Vegetables.
