Stuffed Red Peppers

These are delicious!  Red peppers are somehow both sweet and savory and so go so well with stuffing.  You can use Orange or Yellow as well but generally these are more tasty them Green Peppers when stuffing and baking.

It seems lately that they are always on sale, usually for about $1 a piece.  That also makes a great healthy and frugal meal that won't break the bank just to feed a family.

You will Need:

1 Pepper per person served

1 TBSP Olive Oil

1 cup chopped onions

2 garlic cloves, minced

1 1/2 cups chopped tomatoes (or 1 can drained)

1/4 Cup Snipped Fresh Dill

1/4 Cup Fresh Parsley

3 Cups cooked Rice (Any variety).  Barley is also a great alternative

Salt and Pepper to taste

1.  Preheat the oven to 375.  

1 Cup grated Parmesan cheese

2.  Cut the tops of peppers and remove seeds and white flesh.  Blanch in boiling water for 5 minutes, and place in a baking pan

3. In medium skillet, saute the onions and garlic for about 3 minutes.  Add tomatoes, dill, and parsley. Cook until softened.  Stir in rice, and season with salt and pepper.

4.  Fill each pepper with the rice mix, then top with Parmesan cheese.

5. Bake for about 20 minutes or until heated through and cheese is melted and slightly browned.
