Sunday Breakfast- Biscuits and Gravy
Since Traditional Biscuits and gravy are usually meat based it's next to impossible to have this at any restaurant that is not Vegan/Vegetarian. Good news is that this warm and comforting dish is easy to make. This is a perfect recipe for leftover biscuits that maybe you made the night before for dinner. Gather Up:
1 Biscuit per person, halved and toasted with butter
3 TBSP AP Flour
1 Cup Milk
1 Cup Veggie Stock
1 Small carrot diced
1 Medium Onion chopped
2 TBSP Fresh Basil, Thyme or Rosemary
1 tsp Vegetarian Worchester sauce
2 TBSP Tamari or Soy Sauce
dash of Liquid smoke
Olive Oil
1. Saute the onions in 1 TBSP olive oil until translucent and starting to brown. Add carrots and cook until just tender. Add 2 TBSP Olive Oil and add in flour. Coat veggies well and cook about 2 minutes. Slowly add in the Milk and Stock.
2. Add the other ingredients and simmer sauce for about 10 minutes or until thickened and bubbly.
3. Pour or spoon a generous amount of gravy on top of the toasted biscuits.
